Nicole's quest for good madelines in France has been surprisingly frustrating. They're like the Twinkies of France. You can get them everywhere, but home-made ones are better.
At this tea house across from the Maison de Jeanne d'Arc (a re-construction if the house she stayed in Orléans), they actually have good madelines. They are strangely gigantic though.
The largeness changes the texture, so they actually do dissolve in tea as described by Proust.
Anyway, if you happen by this nice little teahouse, the ones withOUT chocolate chips are lemony and superior.
